A common itinerary is 2 nights in Shimla (including Kufri and local sightseeing), then travel to Manali for 3 nights where you can cover local spots, Solang Valley and even go towards Atal Tunnel side.
The key is not to overload each day with too many places, especially when traveling with family. Keep one or two main spots per day so the trip feels relaxed and enjoyable.
